“We live in a wonderful world that is full of beauty, charm and adventure. There is no end to the adventures we can have if only we seek them with our eyes open.” ~ J. Nehru

What a month! May was definitely a month for the books! We started the month with our anniversary and The Hubs’ birthday, and ended with a trip back to Pennsylvania for a special graduation! So come along with me on a new feature here on the blog, as I take you through a quick recap of the month, from favorite recipes to new adventures!

The weather finally improved here in Southwest Michigan! The warm sun finally graced us with its presence, and I finally had an opportunity to work on my tan! You can check out this post to see some of the awesome shots I was able to capture at the St. Joseph Lighthouse!

The Hubs and I celebrated our THIRD anniversary with a quiet dinner at Bistro on the Boulevard in St. Joe. A bottle of wine, a delicious meal, and beautiful view of Lake Michigan made our anniversary dinner perfect! I had the potato crusted halibut, and it was delicious! If you find yourself in the area and you are looking for a meal a little more upscale than pizza or burgers, check out The Bistro! Something that I’ve learned over the last few years of being married to Sam, can be summed up perfectly in this quote from Elder F. Burton Howard, “if you want something to last forever, you treat it differently. You shield it and protect it. You never abuse it. You don’t expose it to the elements. you don’t make it common or ordinary. If it ever becomes tarnished, you lovingly polish it until it gleams like new. It becomes special because you have made it so, and it grows more beautiful and precious as time goes by.”

I love so many things about this picture! A nice woman was offering to take the photo for us…hence The Hubs’ finger! Ha!!

IF you LOVE Thai as much as we do, you have to check out these posts for Very Veggie Red Thai Curry and Thai Soup that were posted to the blog this month! Your tastebuds will thank you!

The month ended with The Hubs and I traveling back to Pennsylvania for Colton’s high school graduation! The week was full of family and food and laughter! (I may have fallen off the healthy diet wagon…and might have also eaten ALL the cheese!) All in all we had a wonderful time, from watching Colton graduate, to watching old family movies with my folks!
